Situated in a one-time factory building, the restaurant Eska belongs to the Ambiente group, a well-known name on the Prague food scene and basically a guarantee of good quality. The interior design of the place looks as if torn from the pages of über-hip design magazine Wallpaper, and befitting its industrial setting, it’s very grand in scale. Two stories: on the ground floor is the open kitchen with its accompanying chef’s table, as well as a smallish bistro where you can also order some items for take-away; on the upper floor is the restaurant proper. “New Czech cuisine” is the leading theme here, meaning traditional dishes adapted to today.
On the wine list you’ll find only organic wines, and much of the ingredients used for the menu have been locally sourced. Speaking of the menu, there are a few meat and seafood dishes, but the main focus here is on vegetables. For instance, a grilled head of cabbage with onion sauce; beets with the texture of plums – because they have been dried at 50ºC for 24 hours, and so on. In any case, Eska is a great place to find some gastronomic inspiration – taking into consideration that the head chef is Martin Stangl, who came straight from Prague’s Michelin-starred La Degustation Boheme Bourgeoise (also an Ambiente concern), is it any wonder?
