The best restaurant of 2005 - a new addition to the empire of Gordon Ramsay (Boxwood Cafe, Petrus, Connaught, Gordon Ramsay Claridge's, The Savoy Grill etc.), the pride of culinary London. Intelligent cuisine (if such a term is applicable to cookery) and design. Nothing over the top, no pretentiousness. The interior creates an unmistakable sense of stability and quality. The chef at Maze is Jason Atherton who used to work for Ramsay in his Dubai restaurant (before that - in El Bulli).
Maze offers you two choices - the traditional three course meal or 20 tapas-style starters you can combine into six, eight or eleven appetisers. A gastronomic adventure is guaranteed. You might be surprised to find there are no traditional tablecloths at Maze (the table surface is perfect, on the other hand), and cutlery (placed on a specially designed metal tray) is not changed between the courses.
The dishes are also unusually small-sized. Atherton's philosophy is simple: "There is no place in the modern-day world for seemingly untouched linen and haughty manners. People want huge restaurants with great ambience." And excellent cuisine, of course. Abandon hopes of getting in without an advance booking (well, maybe you'll get a place at the bar), and don't be surprised if you're politely asked for a guarantee deposit of GBP 60 (for four persons).
