The Providores, London

A restaurant to go for fine shades of flavors. Played upon and subtle, they captivate beyond resistance and are like nothing you have ever tried before. The Providores is a cherished project of the renowned New Zealander, Peter Gordon, and his colleague, Michael McGrath, and definitely one of the most amazing restaurants of London. There is nothing commercial about the small street of the charming Marylebone area, just centuries-old buildings and tasteful destinations, The Providores being one of them. The Latvian Embassy is just around the corner, too.
The ground floor Tapa bar features traditional long, wooden tables, a stock of wines right behind the counter and a buzz of voices, filling the spacious room. The restaurant is sited one floor up. It is a little smaller and fit out with cozy, white-decked tables. Its white walls are flooded with abundance of daylight, while at night a dimly lit and intimate ambiance enfolds there. Everything is modest, conservative, and natural. A décor designed without millions worth investments, and all the better, as people hardly notice it anyway. Captivated by marvelous flavors of meal, they pay no attention to the surroundings and notice other guests only when someone is getting up to leave. The Providores presents an absolutely perfect business concept - a laid-back chatter fills the bar, while a little more formal air surrounds the restaurant.
To be accurate, The Providores offers not the traditional fusion style cuisine. Instead of a typical west/east combination, Peter Gordon reveals an almost unique interpretation of New Zealand and Australian gastronomy. Do not expect a traditional kangaroo, yet crunchy buckwheat and goat's curd are more than marvelous. A white, crusted outside and a soft creamy inside is so delicious that instantly erases any calorie-counting from your mind, but otherwise very simple buckwheat is literally livened up by flavory interplay of thyme and balm mint. Or else - tamarind, green peppercorn and coconut laksa with squid, a crab dumpling, green tea noodles and coriander. Or roast Elwy Valley lamb with feta salad and Marcona almonds...Whatever you order, every dish surprises with a matchless bouquet of flavors, sometimes giving no clue what exactly ingredients had been used. Everything is fantastic, and even the most seasoned culinary gurus are sent into raptures! Simple thing like pickled red cabbage seems different than the one back at home - more sapid and refreshing.
Servings are quite small, yet it suits a gourmand spot like this. As for wine, The Providores urges to try Australian and New Zealand ones as only few European wines are to be found on the list. If you hesitate, rely on sommelier's advice to make the best choice, and, moreover, wine is available by glass as well. By the way, aficionados of Peter Gordon's culinary flair can go to Istanbul, too. Opened in Taksim area in 2001, his restaurant Changa soon became one of the most talked-about newcomers on the Turkish restaurant scene. Müzedechanga, in its turn, housed in Sakip Sabanci art museum and opened just four years later, is considered to be the best restaurant in the whole city. Whatever it may be, a fantastic view on Bosporus is guarantied!
