Fogo de Chão, Sao Paulo

Author: Mārtiņš Rītiņš

Roasting-jacks with big chunks of meat, dripping with fat. Meat slowly rotates over open fire, accompanied by photo cameras' flash lights. Fogo de Chão offers an exciting gastronomic experience and excellent food for a very reasonable price. Any of more then ten Fogo chain restaurants all over the USA and Brazil are a pleasant surprise even for a culinary expert - also the ones located in suburbs or near gas stations.
One of them, in Sao Paulo, can host several hundred people. It resembles a spacious movie pavilion - people with plates swarming at the salad buffet with unbelievably fresh radish, tomatoes, cucumbers, artichokes and asparagus - choosing whatever they please. Right there you can carve a slice from a big cheese round or a chunk of ham too. With loaded plates gourmands return to their tables, being immediately surrounded by a whole squadron of waiters.
Then comes the best part! With skewers in their hands, the waiters go from table to table offering cuts from fire-roasted beef, veal, lamb, pork or chicken. Meat is prepared in numerous ways to satisfy any taste - raw, medium or well done. Heaps of salad is piled up with abundance of excellent quality meat. It is not possible to taste everything in one go! Each guest uses a two-sided disk to control the pace of their meal - the green side means - bring more; the red side indicates a stopping point. Even turning the disk on „Stop, I am full!" does not hold the waiters from enticing you with juicy pork ribs or leg of lamb.
Forget about dress code - Fogo de Chão is well loved by various sorts of gourmands. And for just 18 Ls you can yield to temptations of a lively atmosphere, joyful music and delicious food, eating as much as you possibly can. If you do not speak Portuguese, the waiters are ready to communicate in English too - no problem at all.
