This month is marked by one of the most intriguing event that has ever taken place in the world of gastronomy - Sotheby's auction of the legendary elBulli wine cellar. The announced auction dates are 3 April in Hong Kong and 26 April in New York. The cellar contains 8807 wine bottles, and all proceeds will benefit the elBulli Foundation - an academic culinary laboratory due to open in 2015. It will replace the already closed elBulli restaurant, but an online culinary encyclopedia La Bullipedia is planned to be launch in 2016.
At the same time, Adrià brothers (Ferran and Albert) in Barcelona continue to develop more down-to-earth version of haute cuisine, a trend started by their tapa bar Tickets in 2011. Yet not in the least bit they would compromise their high quality culinary standards!
It is proved by their new PAKTA restaurant, sited just 200 meters from Tickets. This compact place with only 32 seats features a fabulous Japanese - Peruvian fusion cuisine, but the name "pakta" in ancient Inca language means a union. A customary name for such cooking is Nikkei, which is also a name for Japanese emigrants and their descendants, residing in foreign countries. Japanese have also shaped local cuisines, introducing their food preparation traditions. Mutual coexistence and interaction always gives birth to something new and unexpected, and PAKTA has taken on the challenge to further develop and experiment along these lines. There is a historic background to be mentioned as well - Peru was the first Latin American country to accept Japanese immigrants and the first 790 Japanese moved to Peru in 1899.
Accordingly, there are two chefs in PAKTA - Jorge Muñoz Castro, a Spanish chef with Peruvian roots and Japanese Kyoko Ii. They have worked together for over five months, experimenting with over 100 various recipes, until cutting down this number to 35. The process of innovation is not over, however, and they promise to change menu regularly. As with Tickets, only online reservations are available.
