Levant is the historical designation of the region that borders the eastern shores of the Mediterranean Sea, encompassing present-day Lebanon, Syria, Jordan, Israel and the Palestinian territories. Over the centuries, under the influence of various cultures, a common Levantine cuisine arose, incorporating the traditional mezzes, hummus, tabbouleh, fattoush and other dishes for which this region is known.
