Birch trees, like Latvians, are survivalists of a sort. A birch tree will survive even if its neighbouring trees wither. Its silvery beauty and the warmth of its firewood have made it a perennial symbol of home and homeland for the Latvians.
In the spring, when the ground has just begun to thaw, Latvians tap birches for their sap, rich in minerals and locally venerated as a health-giving elixir. Properly fermented, the sap can last even until the following year. One recipe is to add some raisins and a slice of lemon peel to help the sap keep properly. A small branch from a black currant bush will also do the trick.
