Istanbul locals know Vefa as a celebrated maker of vinegar and pomegranate syrup, but their main claim on the popular imagination is the unique "boza" beverage. An Ottoman favourite, boza is made from slightly fermented millet seed, with a more alcoholic version traditionally made from hemp seed and darnel meal and a very wide variety of flavours to suit every taste, from sharp and bitter to smoother refinements. Vefa Bozacısı have kept their recipe a secret since the premises first opened in the 19th century, and it remains a staple of the cognoscenti on winter evenings. Discover this old café in an untouched ancient corner of the city and take a break from the crowds and hubbub.
