Istanbul locals know Vefa as a celebrated maker of vinegar and pomegranate syrup, but their main claim on the popular imagination is the unique "boza" beverage. An Ottoman favourite, boza is made from slightly fermented millet seed, with a more alcoholic version traditionally made from hemp seed and darnel meal and a very wide variety of flavours to suit every taste, from sharp and bitter to smoother refinements.
