Politicians from the nearby parliament building head for Trattoria Cavalier Gino at lunchtime and, if you are there at the same time, the atmosphere is like a good Italian movie, with a reel of countless discussions and fates being decided. Some of the grey-haired patrons appear to be almost as immortal as Rome itself.
The service is outstanding, and it is worth asking for the menu again, just in case you missed something and still have room for a little extra. Trattoria Cavalier Gino embodies the best traditions of Italian cuisine, with a seasonal menu, whose basis is formed by different pasta and meat dishes. You should definitely try the Spaghetti alla ciociara. Although the thickly-cut spaghetti with strips of bacon and peas may seem like a heavy choice, the combination is superb and well-considered, and will be polished off without your even noticing.
